The most versatile of knives, the curved blade of the Kai Shun Chef's Knife allows rocking back and forth for fine cutting, slicing, chopping, and mincing. Just about the sharpest knife in the world and certainly among the few world class Japanese knives, in terms of its exceptional sharpness, superb precision and ergonomic design. The cross-section of the handle is chestnut shaped and created specificially in this shape to fit the hand comfortably and securely, whilst the knife's full tang (the handle extending fully into the handle) ensures excellent safety.

The knives in the Kai Shun range have 32 layers of folded steel, ensuring that they have a greater toughness, flexibility and strength than a single layered knife of the same material in an identical thickness. The hardness of the steel (denoted by Shun's extremely high HRC value of 61±1) is the the hardest steel available for knives, and its V-gold-10 steel innermost layer is responsible for the incomparably sharp edge.
